自製煉乳 How to make Condensed Milk

自製煉乳(自製煉奶) Homemade Condensed Milk 


用微波爐自製煉乳, 原來是很簡單的!

It's really easy to make condensed milk using microwave oven!

材料:-

400 毫升全脂或脱脂奶
120g

Ingredients :-

400ml Full or Skim Milk
120g Sugar

做法:

1.  預備可入微波爐的容器
2.  容器下放一個碟子



3.  奶加入糖攪拌



4.  放入微波爐




5.  用600W 加熱15 分鐘
6.  取出慢慢攪拌
7.  攪拌時小心滾燙的熱牛奶溢出




第二次翻熱
8.  用600W 加熱5 分鐘
9.  取出慢慢攪拌




第三,第四
10.  用600W 加熱 2 分鐘
11.  取出慢慢攪拌
12.  重復步驟兩次至牛奶變濃稠
13.  放涼至室溫



14.  放涼後也會更濃稠一些



15.  倒入密封的容器
16.  放入冰箱冷藏, 可保存大約一個月




Instructions:- 

1 . Prepare a container that suitable to use in microwave
2.  Put a plate beneath the container
3.  Add sugar in milk and stir well
4.  Put into the microwave

First heating
5.  Heat at 600 W for 15 minutes
6.  Take out and stir slowly
7.   Be careful the hot milk will spill out when stirring


Second heating
8.  Heat at 600 W for 5 minutes
9.  Take out and stir slowly

Third and Forth heating
10.  Heat at 600 W for 2 minutes
11.  Take out and stir slowly
12.  Repeat the same steps for 2 times till the milk turns thick

13.  Let it cool down to room temperature
14.  It will turn thicker after cooled down
15.  Pour into a air-tight container
16.  Refrigerate it. It can be stored for about one month

哈蜜瓜冰淇淋(哈蜜瓜雪糕)(不用雪糕機) How to Make Cantaloupe Ice Cream (No Ice Cream Machine)


在日本北海道之旅後,念念不忘哈密瓜冰淇淋的味道。製作自己的哈密瓜冰淇淋也很簡單。加上椰子果凍,真是消暑佳品!

Can't forget the taste of cantaloupe ice cream after the Hokkaido trip in Japan. It's not
difficult to make your own cantaloupe ice cream. Added the coconut jelly with
the ice cream, it's really cool and refreshing !

哈蜜瓜冰淇淋材料:- 
250g 鮮奶油(攪用忌廉)(淡奶油)
180g 煉乳(煉奶)
哈蜜瓜

椰汁果凍材料:- 
300g 椰子水(椰汁)
1 ½ 茶匙菜燕粉 (寒天粉)
10g

Cantaloupe Ice Cream Ingredients:
250g Whipping Cream
180g Condensed Milk
Cantaloupe

Coconut Jelly Ingredients:- 
300g Coconut Water
1 ½ Tsp Agar Agar Powder
10g Sugar

*如用不同牌子的菜燕粉要查看標籤説明水和糖的份量
* Please take note on the description of the amount of water and sugar if you use different brand of agar agar powder


做法:
1.  把鮮奶油(攪用忌廉) 放在冰格裡 15分鐘



2.  把哈蜜瓜切半
3.  拿走種子



4.  取出大約250g 瓜肉



5.  把瓜肉放入攪拌器攪成汁



6.  把鮮奶油奶打至出現尖勾和有光澤



7.  慢慢加入煉乳打發



8.  再加入哈蜜瓜汁拌匀



10.  倒入容器
11.  放入冰格冷藏六小時或



12.  把椰子水和菜燕粉放入小鍋中
13.  用中火邊攪拌至把菜燕粉煮熔
14.  加入糖煮滾



15.  把果凍液慢慢倒入盤中
16.  盡量把氣泡弄走
17.  放入冰箱至少两小時



18.  把果凍切成小块



19.  把果凍和冰淇淋放在哈蜜瓜上



20.  享受時間!!



 Instructions:
1.  Put the whipping cream into the freezer for 15 mins
2.  Cut the cantaloupe in half
3.  Remove the seeds
4.  Scoop about 250g pulp
5.  Put the pulp into the bowl of a food processor and process until smooth
6.  Whip the whipping cream until stiff peaks form
7.  Add the condensed milk slowly
8.  Add cantaloupe puree and stir to combine
9.  Pour into a container
10.  Place to the freezer to freeze at least 6 hours or overnight
11.  Put the coconut water and agar agar powder into a small pot
12.  While stirring, use medium heat to boil the agar agar powder till it is completely dissolved
13.  Add and boil the sugar
14.  Pour the jelly mixture into the container slowly
15.  Try to remove the air bubbles
16.  Chill for at least two hours
17.  Cut the jelly into small cubes
18.  Put the jelly and  ice cream on the cantaloupe
19.  Time to enjoy!!
