杏仁曲奇餅乾 How to Make Almond Cookies


杏仁曲奇餅乾 -簡單食譜 (免機打) Almond Cookies - Easy Recipe (No Mixer)

材料(19 -20片份量):
 

雞蛋一隻
80g 糖粉
155g 低筋面粉
100g 杏仁粉
100g 無鹽牛油(無鹽奶油)(室温)
1g 泡打粉(發粉, 發酵粉)
1 茶匙香草精
1/4 茶匙鹽
 
蛋黃 1
1 湯匙牛奶

Ingredients (19 - 20 pieces):-
 
 
1 Egg
80g Powder Sugar
155g Cake Flour
100g Almond Powder
100g Unsalted Butter (room temperature)
1g Baking Powder
1 Tsp Vanilla Extract
1/4 Tsp Salt

1 Egg Yolk

1 Tbsp Milk





做法 Methods:


*牛油要放至室温才比較容易攪拌
*Leave the butter to room temperature is easier to be stirred 

1.  牛油加入糖粉和茶匙鹽
     Add powder sugar and salt to the butter


 
 
 
2.  攪拌牛油和糖至軟身和顏色變淺
     Mix butter and sugar until creamy and light  

 


 

3.  加入香草精

     Add Vanilla Extract
 
 


4.  慢慢加入蛋攪拌均匀
     Add egg gradually and mix well


 
 
 
 

 

5.  把面粉, 杏仁粉和泡打粉篩入蛋糊攪拌均匀
     Sift the cake flour, almond powder and baking powder into the mixture and mix well
 
 
 


6.  用保鮮膜包好麵團
     Wrap the dough with cling wrap
 
7.  放入冰箱冷藏30分鐘  
     Put in the refrigerator for 30 mins

8.  把麵團分成25g一份    
     Divide the dough into pieces with 25g each  




9.  把麵團揉成球狀
     Shape the dough into a round ball




10.  輕輕壓扁
       Gently flatten the dough

 


11.  預熱焗爐至180°C
        Pre-heat the oven to 180°


12.  在餅乾麵團面上輕輕切線
       Cut lines lightly on the cookie dough


 



13.  蛋黃加入1湯匙牛奶攪拌均匀
       Mix 1 tbsp milk with egg yolk and stir well




14.  在餅乾麵團上輕輕塗上蛋汁                              
       Brush the egg mixture on the top of the cookie dough lightly
 


15.  用180°C 焗 18 - 22 分鐘
       烘焙的時間和度數視乎不同牌子和類型的烤爐
      Bake at 180°C for 18 - 22 mins
      Baking time and degree may vary from the brand and type of your oven
