材料:
225g 高筋麵粉
25g 低筋面粉
50g 砂糖
5g 快速酵母
4g 鹽
35g 室温牛油
50毫升水 (30°C)
50毫升牛奶(30°C)

珍珠糖
Ingredients:

25g Cake Flour
50g Sugar
5g Instant Yeast
4g Salt
35g Softened Butter
50ml Water (30°C)
50ml Milk (30°C)
1 Egg
Pearl Sugar6. 打至成球狀
7. 便可加入室温牛油
8. 打至麵團變得光滑有彈性
9. 測試麵團可成薄膜便可
10. 把粉團揉成球狀
11. 蓋上濕毛巾或保鮮膜
12. 第一次發酵一小時
13. 取出把麵團分割成九等份
14. 壓出空氣揉成球狀
15. 鬆弛15分鐘
16. 麵包盤塗上牛油
17. 壓出空氣
18. 再次揉成球狀
19. 收口朝下放入麵包盤
20. 第二次發酵45分鐘至兩倍大
21. 可以將麵包盤放在烤爐裡再放一杯溫水

22. 取出麵包盤後 預熱焗爐至190°C
23. 蛋加水拌匀
24. 在麵團上輕輕塗上蛋汁再撒點珍珠糖
25. 用190°C 焗 13 - 15 分鐘

26. 麵包面塗上牛油

- Add the yeast into the warm milk and water, add 1 tbsp sugar and stir
- Let the mixture stand for about 5 to 8 mins till the yeasts swell and foam
- This is a crucial step to ensure the yeast is alive
- Add flour, salt and egg
- Leave some egg for later use
- Knead until a dough is formed
- And add the softened butter
- Knead the dough becomes smooth and elastic
- Test the dough's gluten is developed
- Shape the dough into a round ball
- Cover with wet cloth or plastic
- First Proofing for 1 hour
- Take out the dough and divide it into 9 equal pieces
- Press out the air and shape the dough to a small ball
- Another method to roll a small ball
- Rest for 15 mins
- Grease the bread tin with butter
- Punch out the air
- Shape the dough again
- Place in the bread tin with seam side down
- Second proofing for 45 mins until doubled in size
- You can place the bread tin inside the oven with a cup of warm water
- Take out the bread tin then pre-heat oven to 190°C
- Add some water in the egg and stir well
- Brush the egg mixture on the top of the dough lightly
- Sprinkle with pearl sugar
- Bake at 190°C for 13 - 15 mins
- Baking time and degree may vary from the brand and type of your oven
- Brush the butter on the top of the bread
