今次自己做紅豆蓉,做出來的抹茶紅豆麵包顏色配搭效果很好,很療癒!抹茶和紅豆真的是最佳配搭!
(如有麺包機,可用麵包機制作麵團。)
The red bean paste
is homemade. The colour layers effect of
the matcha red bean bread looks very nice. Matcha and red bean is really the perfect
match!

dough)

材料:
300g 高筋麵粉
30g 細砂糖
9g 奶粉
6g 快速酵母
6g 鹽
18g 無鹽牛油
170毫升水(30°C)
5g 抹茶粉
紅豆蓉 (或罐裝紅豆蓉)

300g Bread Flour
30g Sugar
9g Milk Powder
6g Instant Yeast
6g Salt
18g Unsalted Butter
170ml Water(30°C)
5g Matcha Powder
Red Bean Paste (or
Can Sweetened Red Beans)
Instructions of Red Bean Paste:
5. Cool down for later use
Instructions of Bread :
紅豆蓉做法:
1. 將紅豆浸泡3
- 4小時或浸一晚
2. 滴乾水份放入電飯鍋裡
3. 加入400毫升水煮大約1小時
4. 滴乾水份加入30g 糖拌勻
5. 放凉備用
麵包做法:
1. 酵母加入水中, 加—湯匙糖拌匀
2. 等大約5 - 8 分鐘至酵母有氣泡
4. 加入麵粉, 糖, 奶粉和鹽
7. 打至變得光滑有彈性
9. 把麵團分割成两等份
10. 把抹茶粉加10ml水拌匀
12. 把麵團揉成球狀
15. 两份麵團各再分割成两等份
16. 每份麵團壓出空氣揉成長條狀
18. 麵包盤塗上牛油
20. 把抹茶麵團放在普通麵團上
25. 第二次發酵40分鐘至兩倍大
27. 取出麵包盤後 預熱焗爐至190°C
28. 用190°C 焗 30 - 35 分鐘
29. 烘焙的時間和度數視乎不同牌子和類型的烤爐
30. 新鮮出爐!
1. Soak the red beans
for 3 - 4 hours or overnight
2. Drain the water and
place the red beans into the rice cooker
3. Add 400 ml water and
cook for about 1 hour
4. Drain the water, add
30g sugar and stir well5. Cool down for later use
1. Add the yeast into the warm water, add 1 tbsp
sugar and stir
2. Let the mixture stand for about 5 to 8 mins
till the yeasts swell and foam
3. This is a crucial step to ensure the yeast is
alive
4. Add flour, sugar, milk powder and salt
5. Knead until a dough is formed
6. And add the softened butter
7. Knead the dough becomes smooth and elastic
8. Test the dough's gluten is developed
9. Divide the dough into two pieces
10. Mix the matcha powder with 10ml water
11. Add the matcha powder into one of the dough
and knead until mixed evenly
12. Shape the dough into a round ball
13. Cover with wet clothe or plastic wrap
14. First
proofing for 1 hour
15. Divide each dough into two equal pieces
16. Press
out the air and shape the dough to a rectangular strip
17. Rest
for 15 mins
18. Grease
the bread tin with butter
19. Press
out the air and roll to flatten the
dough
20. Put the matcha dough on top of the plain
dough
21. Roll the two dough to stick them together
22. Spread the red bean paste on the dough
evenly
23. Slowly roll up and seal both ends of the
dough
24. Place in the bread tin with seam side down
25. Second proofing for 40 mins until doubled in
size
26. You can place the bread tin inside the oven
with a cup of warm water
27. Take out the bread tin then pre-heat the oven
to 190°C
28. Bake at 190°C for 30 - 35 mins
29. Baking time and degree may vary from the
brand and type of your oven
