鬆軟原味戚風蛋糕(雪紡蛋糕) - 簡單做How to Make Chiffon Cake – Simple and Easy Recipe


做戚風蛋糕,新手容易會失敗。和大家分享這個簡單的做法,只要留意視頻上的小提示,定容易成功!

這個份量可做三個10cm 戚風蛋糕或一個17cm的戚風蛋糕。 This amount of ingredients can make three 10cm chiffon cakes or one 17cm chiffon cake







蛋黃糊材料:
蛋黃三 

30g細砂糖
45g
45g植物油
75g低筋面粉
1/4 茶匙香草香精 

蛋白霜材料:
蛋白三
40g細砂糖


Egg Yolk Batter Ingredients:
3 Egg Yolks
30g Castor Sugar
45g Water
45g Vegetable Oil
75g Cake Flour
1/4 Tsp Vanilla Extract  

Meringue Ingredients:-
3 Egg Whites
40g Castor Sugar


做法:

蛋黃糊
  • 蛋黄加入水和香草香精
  • 再加入糖拌匀
  • 把粉篩入蛋漿
  • 拌匀至無粉粒
  • 加入油拌匀


蛋白霜
  • *蛋白不可以有蛋黃,不然會打發不起
  • 蛋白加入糖用打蛋器高速打發
  • 打發至出現尖勾和有光澤即可, 不要過度打發
  • 蛋白霜應該均匀細腻有光澤
  • 預熱焗爐180°C
  • 把一些蛋白霜加入蛋黄糊中
  • 混合均匀
  • 再把蛋黄糊倒入蛋白霜中
  • 混合均匀至面糊看不見蛋面霜
  • 把蛋糊倒入蛋糕模至八成滿
  • 微微震動蛋糕模把氣泡震走
  • 180°C 25 分鐘
  • 把蛋糕倒轉放涼
  • *蛋糕一定要完全放涼才可拿出


裝飾蛋糕
  • 把糖霜篩在蛋糕面即可
  • 用黑巧克力粒或普通排裝黑巧克力裝飾蛋糕
  • 把巧克力隔水熟溶
  • 放入擠花袋和裝飾蛋糕



Methods:

Egg Yolk Batter
  • Add water and vanilla extract into the egg yolks
  • Add sugar and mix
  • Sift the flour into the egg batter
  • Mix well
  • Add oil and mix well


Meringue
  • Take note that no yolk remains in the whites otherwise it is not able to whisk in stiff form
  • Add sugar into the egg white and whisk at high speed with a mixer
  • Whisk till medium stiff snow and do not over-beaten
  • Meringue should be smooth and shiny
  • Preheat the oven to 180°C
  • Add some of the meringue to the egg yolk batter
  • Stir and mix well
  • And pour the egg yolk batter into the meringue
  • Fold to mix the batter until no lumps remain
  • Pour the mixture into the cake tin till 80% filled
  • Shake the cake tin slightly to raise the air bubbles out of the batter
  • Bake at 180°C for 25 mins
  • Turn the cakes upside down for cooling down
  • Remove the cakes only when they are completely cooled down


Decoration
  • Sift the icing sugar on top of the cake
  • Use dark chocolate chips or bar to decorate the cakes
  • Double boil to melt the chocolate chips
  • Put into the piping bag and decorate the cakes

新式八寶飯 -八寶拌飯 How to Make Eight-Treasure Rice Bibimbap

韓國人喜歡吃拌飯,我選了八種簡單材料,也來個八寳拌飯,好看, 好意頭, 也非常美味你也選八種材料做你喜愛的八寶拌飯吧!
Just choose eight kinds of ingredients that you like and make your own favourite bibimbap!





八寶飯材料:
雞腿肉
豆芽
蘑菇
火腿
粟米(玉米)
紅蘿蔔
肉鬆

Eight Ingredients: 
Chicken thigh  
Eggs
Bean sprouts
Mushrooms
Ham
Sweet Corns
Carrot
Meat Floss

做法:
  • 先煮白飯   
  • 雞肉切條
  • 調味: 半茶匙糖,半茶匙生粉(玉米粉),半茶匙生抽,半茶匙麻油
  • 蛋打散煎熟
  • 把蛋切成條狀
  • 紅蘿蔔
  • 炒蘑菇
  • 炒粟米
  • 炒火腿
  • 炒雞肉至全熟
  • 炒豆芽加一點
  • 醬料:
  •   甜醬油
  •   少許麻油
  • 你喜愛的醬料
  • 把材料放上飯面
  • 最後加上肉鬆
Instructions:
  • Cook the rice first
  • Cut chicken thigh into small pieces
  • Seasoning : 1/2 tsp sugar, 1/2 tsp corn flour, 1/2 tsp soy sauce, 1/2 tsp sesame oil
  • Beat and fry the eggs
  • Cut the eggs into strips
  • Fry the carrot
  • Fry the mushrooms
  • Fry the sweet corns
  • Fry the ham
  • Fry meat till fully cooked
  • Fry the bean sprouts andadd a pinch of salt
  • Prepare sauce:
  •     Sweet soy sauce
  •     Sesame oil
  • or any sauce you may like
  • Put the ingredients on top of the hot rice
  • Lastly, add the meat floss

草莓果凍乳酪蛋糕(士多啤梨啫喱芝士蛋糕)(新加坡很受歡迎的乳酪蛋糕)(免焗) Strawberry Jelly Heart Cheesecake (No Bake)

Jelly Heart 是新加坡個很受歡迎的乳酪蛋糕,三層不同材料合起來,加上草莓,外表非常漂亮,所以也是送禮或在公司請客的好選擇。而且只要放入冰箱,可保存好幾天。做法步驟可能比較多點點,但也不會太難。很徝得試做!


Jelly Heart is a popular cheese cake in Singapore. The three layers of different flavors coupled with strawberries make the appearance of the cake very beautify. So, it is a good choice as a gift or for company treat.

餅底材料:

250g 消化餅乾

120g 牛油 
乳酪糊層材料:
250g 奶油乳酪(奶油芝士)
70g 細砂糖或糖粉
6g 吉士丁粉
100ml 熱水
½ 茶匙香草香精
草莓(士多啤梨) 
果凍層材料:
160g 草莓味果凍粉 (士多啤梨味啫喱粉)
400ml熱水
350ml冷水
Cake Base Ingredients :
250g Digestive Biscuits
120g Butter 
Cheese Layer Ingredients:
250g Cream Cheese
70g Fine Sugar
6g Gelatin Powder
100ml Hot Water
½ tsp Vanilla Extract 
Jelly Layer Ingredients:
160g Strawberry Favour  Jelly Powder
400ml Hot Water
350ml Cold Water
餅底做法:
  • 把餅乾敲成細碎
  • 加入溶好的牛油攪拌均勻
  • 用7  8寸蛋糕模
  • 放入兩層烤盤紙會更容易取出蛋糕
  • 餅碎倒入模型壓實
  • 放入冰箱 
乳酪糊層做法:
  • 把草莓切一半,然後在頂部切一個V成心型
  • 吉士丁粉加100ml 熱水攪拌至溶解
  • 奶油乳酪加糖攪拌均匀至軟身
  • 分三次加吉士丁粉一起攪拌均勻
  • 加入香草香精
  • 攪拌均勻
  • 乳酪糊倒入餅底均勻鋪平
  • 將草莓均匀地放在乳酪糊上和輕輕按入乳酪糊中
  • *將草莓輕輕按入乳酪糊中這個步驟很重要。不然,草莓可能會在加入果凍液時浮起來
  • 冷藏至少4小時
果凍層做法:
  • 果凍粉加入 400ml 熱水拌匀至完全溶解
  • 再加350ml 冷水拌匀
  • *果凍液要完全冷卻至室温才可加入乳酪層上以免把乳酪糊融化
  • 把果凍輕輕倒入乳酪層上至完全覆蓋草莓
  • 冷藏至少4小時
Method for cake base:-
  • Hit the biscuits until they turn into fine crumbs
  • Add the melted butter and stir well
  • Use the 7 or 8 inches cake tin
  • Put 2 layers of baking paper which makes easier to take out the cake
  • Pour and press the biscuit mixture down onto the tin
  • Place into the fridge to set

Methods for cheese layer:-
  • Cut the strawberry into half and and cut a V at the top so they resemble hearts
  • Add 100ml boiling water into gelatin powder and stir to dissolve
  • Whisk cream cheese with sugar until softened
  • Add the gelatin in three times and mix well
  • Add the vanilla extract  
  • Whisk till smooth
  • Pour the cheese mixture onto the prepared base and spread evenly
  • Evenly spaced out on top and lightly push down each strawberry into the cheese mixture
  • * It is an important step to lightly push down the strawberries into the mixture. Otherwise, the strawberries may float up when adding the jelly mixture
  • Chill for at least 4 hours to set
Methods for Jelly layer:-
  • Add 400ml hot water and stir until all the jelly crystals have dissolved
  • Then add 350ml cold water and stir well
  • * Jelly mixture must be completely cooled down to room temperature before pouring it onto the cheese base to prevent melting the cheese
  • Gently pour the jelly mixture onto the prepared cheese base until fully covered the strawberries
  • Chill for at least 4 hours to set




把蛋糕四邊切平即可
完成!

Cut off the excess for a neater edge 
It’s Done !
