懷舊港式車輪包 -簡單食譜 How to Make Wheel Shaped Bread - Easy Recipe

在香港烘焙店看到小號車輪包模,便立刻買來試做。第一次試做便成功了!外脆內軟,100 分的滿足!  I found and bought the half size wheel shaped bread mould in a baking supply store in Hong Kong. I successfully made the wheel shaped in my first attempt! 100% satisfaction !

材料:


210g 高筋麵粉
40g 砂糖
4g 快速酵母
3g 鹽
25g 室温牛油
40毫升水 (30°C)
40毫升牛奶(30°C)
蛋半隻 (25g)
35g 葡萄乾



Ingredients:

210g Bread Flour
40g Sugar
4g Instant Yeast
3g Salt
25g Softened Butter
40ml Water (30°C)
40ml Milk  (30°C)
1/2 Egg (25g)
35g Raisins

 

做法:


1.  用小號車輪包模和需要幾個夾子

2.  酵母加入水和牛奶中, 加一湯匙糖拌匀
3.  等大約5 - 8 分鐘至酵母有氣泡
     **這個步驟可確定酵母沒有變壞





4.  酵母水加入麵粉, , 鹽和蛋
5.  打至成球狀
6.  便可加入室温牛油



7.  打至麵團變得光滑有彈性
8.  測試麵團可成薄膜便可



9.  把粉團揉成球狀
10.  蓋上濕毛巾或保鮮膜



11.  第一次發酵一小時至兩倍大
12.  將葡萄乾浸泡10分鐘
13.  用厨房紙吸去多餘水分


14.  把麵團分割成两等份



15.  壓出空氣揉成球狀



16.  鬆弛15分鐘



17.  麵包模塗上牛油



18.  壓出空氣
19.  用滾筒把麵團壓平



20.  把葡萄乾平均鋪在麵團上



21.  慢慢把麵團捲起



22.  收口朝下放入麵包模



23.  第二次發酵45分鐘



24.  預熱焗爐至180°C
25.  用180°C 22 - 25 分鐘
       **烘焙的時間和度數視乎不同牌子和類型的烤爐
26.  新鮮出爐!

Methods:
1.  Use half size wheel shaped bread tin and few clips
2.  Add the yeast into the warm milk and water, add 1 tbsp sugar and stir
3.  Let the mixture stand for about 5 to 8 mins till the yeasts swell and foam
4.  This is a crucial step to ensure the yeast is alive
5.  Add flour, sugar , salt, egg and yeast mixture
6.  Knead until a dough is formed
7.   And add the softened butter
8.  Knead the dough becomes smooth and elastic
9.  Test the dough's gluten is developed  
10.  Shape the dough into a round ball
11.  Cover with wet cloth or plastic wrap
12.  First Proofing for 1 hour until doubled in size
13.  Soak the raisins for 10 mins
14.  Use the paper towels to remove extra water
15.  Take out the dough and divide it into 2 equal pieces
16.  Press out the air and shape the dough to a round ball
17.  Rest for 15 mins
18.  Grease the bread tin with butter
19.  Punch out the air
20.  Roll to flatten the dough
21.  Spread the raisins on the dough evenly
22.  Slowly roll up the dough
23.  Place in the bread tin with seam side down
24.  Second proofing for 45 mins
25.  Pre-heat the oven to 180°C
26.  Bake at 180°C for 22 - 25 mins
      **Baking time and degree may vary from the brand and type of your oven
27.  Freshly baked!
