香脆腐皮蝦餅 How to Make Crispy Bean Curd Prawn Pancake

 

香脆腐皮蝦餅 - 簡單做出鼎泰豐風味 
How to Make Crispy Bean Curd Prawn Pancake - Easy Recipe - Din Tai Fung Prawn Cake Style

 

到鼎泰豐用餐,都會點這道美味的酥炸蝦餅。我用了這點子,用簡單的方法做出鼎泰豐黃金腐皮蝦餅的風味。

 

 



材料 (兩份蝦餅份量):

腐皮4片
蝦肉 200g
紅蘿蔔
青蔥
玉米粉一茶匙
生抽一湯匙 (醬清)
胡椒粉一茶匙
蛋白


Ingredients (Two Pancakes):



Bean Curd 4 pieces
Prawn 200g
Carrot
Spring Onion

1 Tsp Corn Flour
1Tbsp Soy Sauce
1 Tsp Pepper
Egg White

做法 Method:


 

1.  我用的腐皮很大 , 可以分成四片

     The bean curd I bought is quite large and can be divided into four pieces

 



 
2.  紅蘿蔔和青蔥切成碎粒
     Finely chop the carrot and spring onion




 

   

 
3.  蝦去殼 ,去腸,清洗乾淨

     Remove the shell ,intestine and clean the prawn

     (用新鮮蝦或者冰鮮蝦也可以, 喜歡吃比較濃味的可以多加點生抽或鹽在蝦蓉裏。)
 
 


 


4.  用餐紙巾 吸去多餘水份

     Use paper towels to remove extra water
 


5.  用刀壓下蝦肉再推開
     Use the cleaver to smash the prawn
 

6.  再將蝦蓉切碎
     Mince the prawn
 
7.  加入胡椒粉, 生抽, ,紅蘿蔔粒, 蔥花和玉米粉
     Add pepper, soy sauce, , carrot , spring onion and corn flour
 

8.  攪拌成蝦膠
     Stir the mixture until it becomes a paste consistency
 

9.  鋪上一片腐皮在圓碟上
     Place 1 piece of bean curd on the round plate
10. 再將蝦膠均勻地鋪上面
      Spread the prawn paste on top evenly
 

 
11. 用蛋白塗在週邊
      Brush the edge with egg white
 

 
12. 再鋪上腐皮
      Place another piece of bean curd on top

 

13. 輕輕壓實
      Press lightly
 

 
14. 用剪刀剪成圓形
      Cut it into a round shape
 

15. 放入冰箱15分鐘
      Place in fridge for 15mins
 
16. 加入油(如果想比較香脆可多加點油)
      Add a tbsp of oil ( Add more oil if you like the pancake to be more crispy)
 

17. 中火煎至香脆
      Fry with medium heat till it turns crispy



 
18. 蝦餅切成條狀
      Cut the pancake into strips
