抹茶紅豆麵包 How to Make Matcha Red Bean Bread

今次自己做紅豆蓉,做出來的抹茶紅豆麵包顏色配搭效果很好,很療癒!抹茶和紅豆真的是最佳配搭!

(如有麺包機,可用麵包機制作麵團。)
The red bean paste is homemade.  The colour layers effect of the matcha red bean bread looks very nice. Matcha and red bean is really the perfect match!

材料:

300g 高筋麵粉
30g 細砂糖
9g 奶粉
6g 快速酵母
6g
18g 無鹽牛油
170毫升水(30°C)
5g 抹茶粉
紅豆蓉 (或罐裝紅豆蓉)
 

Ingredients:-
300g Bread Flour
30g Sugar
9g Milk Powder
6g Instant Yeast
6g Salt
18g Unsalted Butter
170ml Water(30°C)
5g Matcha Powder
Red Bean Paste (or Can Sweetened Red Beans)


紅豆蓉做法:     

1.  將紅豆浸泡3  -  4小時或浸一晚
2.  滴乾水份放入電飯鍋裡
3.  加入400毫升水煮大約1小時
4.  滴乾水份加入30g 糖拌勻
5.  放凉備用






麵包做法:


1.  酵母加入水中, 湯匙糖拌匀
2.  等大約5 - 8 分鐘至酵母有氣泡
3.  這個步驟可確定酵母沒有變壞



4.  加入麵粉, , 奶粉和鹽
5.  打至成麵團



6.  加入室温牛油



7.  打至變得光滑有彈性
8.  測試可成薄膜便可



9.  把麵團分割成两等份
10.  把抹茶粉加10ml水拌匀
11.  一份麵團加入抹茶粉打至均匀



12.  把麵團揉成球狀
13.  蓋上濕毛巾或保鮮膜



14.  第一次發酵一小時




15.  两份麵團各再分割成两等份
16.  每份麵團壓出空氣揉成長條狀
17.  鬆弛15分鐘



18.  麵包盤塗上牛油
19.  壓出空氣用滾筒把麵團壓平



20.  把抹茶麵團放在普通麵團上
21.  把兩種麵團壓平讓粘在一起



22.  把紅豆蓉平均鋪在麵團上



23.  慢慢把麵團捲起和把兩邊封口



24.  收口朝下放入麵包盤



25.  第二次發酵40分鐘至兩倍大
26.  可以將麵包盤放入烤爐裡再放一杯溫水



27.  取出麵包盤後 預熱焗爐至190°C
28.  用190°C 30 - 35 分鐘
29.  烘焙的時間和度數視乎不同牌子和類型的烤爐
30.  新鮮出爐!



Instructions of Red Bean Paste:

 
1.  Soak the red beans for 3 - 4 hours or overnight
2.  Drain the water and place the red beans into the rice cooker
3.  Add 400 ml water and cook for about 1 hour
4.  Drain the water, add 30g sugar and stir well
5.  Cool down for later use

Instructions of Bread :

1.  Add the yeast into the warm water, add 1 tbsp sugar and stir
2.  Let the mixture stand for about 5 to 8 mins till the yeasts swell and foam
3.  This is a crucial step to ensure the yeast is alive
4.  Add flour, sugar, milk powder and salt
5.  Knead until a dough is formed
6.  And add the softened butter
7.  Knead the dough becomes smooth and elastic
8.  Test the dough's gluten is developed  
9.  Divide the dough into two pieces
10.  Mix the matcha powder with 10ml water
11.  Add the matcha powder into one of the dough and knead until mixed evenly
12.  Shape the dough into a round ball
13.  Cover with wet clothe or plastic wrap
14.  First proofing for 1 hour
15.  Divide each dough into two equal pieces
16.  Press out the air and shape the dough to a rectangular strip
17.  Rest for 15 mins
18.  Grease the bread tin with butter
19.  Press out the air and roll to flatten the dough
20.  Put the matcha dough on top of the plain dough
21.  Roll the two dough to stick them together
22.  Spread the red bean paste on the dough evenly
23.  Slowly roll up and seal both ends of the dough
24.  Place in the bread tin with seam side down
25.  Second proofing for 40 mins until doubled in size
26.  You can place the bread tin inside the oven with a cup of warm water
27.  Take out the bread tin then pre-heat the oven to 190°C
28.  Bake at 190°C for 30 - 35 mins
29.  Baking time and degree may vary from the brand and type of your oven
30.  Freshly Baked !

細細蛋糕,滿滿心意。分量小,不怕胖!

餅底材料:

8片奧利奧餅乾
25g無鹽牛油

乳酪糊材料:

90g 奶油乳酪
130g 鮮奶油 (攪用忌廉)(淡奶油)
15g 細砂糖或糖粉
2g 吉士丁粉
4片奧利奧餅乾

Cake Base Ingredients :

8 pcs Oreo Cookies
25g Unsalted Butter

Cake Ingredients:

90g Cream Cheese
130g Whipping Cream
15g Fine Sugar
2g Gelatine Powder
4 pcs Oreo Cookies

餅底做法:

1.  4寸迷你蛋糕模
2.  放烤盤紙入蛋糕模


3.  放餅乾入塑料袋敲成細碎


4.  加入溶好的牛油攪拌均勻


5.  餅碎倒入模型壓實(8片分量)
6.  放入冰箱



乳酪糊做法:

7.  鮮奶油可用手打大約4分鐘至有凝固感




8.  吉士丁粉加一湯匙熱水拌匀至溶解




9.  奶油乳酪加糖攪拌均匀至軟身


10.  加吉士丁粉入奶酪拌匀至溶解



11. 
加入鮮奶油 (攪用忌廉)(淡奶油)


12.  再加入餅乾碎


13.  奶糊倒入蛋糕模


14.  冷藏至少4小時即可



15.  脫模
16.  加點装飾

Instructions:

Cake Base:

1.  Use the 4 inches mini cake tin
2.  Put in baking paper
3.  Hit the cookies until they turn into fine crumbs
4.  Crumb the cookies
5.  Add the melted butter
6.  Pour the cookie crumbs into the cake tin and press (8 pcs of cookies)
7.  Place into the fridge to set
8.  Hand beater to whip the cream for about 4 mins till soft peaks

Cream Cheese:

9..  Add 1 tbsp boiling water into gelatine powder and stir to dissolve
10.  Beat cream cheese with sugar until softened and smooth.
11.  Add the gelatine to the cream cheese and mix together
12.  Add the cream
13.  Add crushed Oreos
14.  Pour the cheesecake filling into the cake tin
15.  Place into the fridge for at least 4 more hours
16.  Take out from the cake tin
17.  Add a little decoration
